Lunch Options: Paul Debrule Hospitality School

By: Andrea Ross

I have been working on researching some good lunch options for our guests to give them a break from touring and to offer restaurants and experiences that are more than just a meal. Last week Kate and I had the pleasure of going to lunch at the Paul Dubrule Hospitality School. This is a not-for-profit vocational school that teaches young adults hospitality and cooking. We actually were there about a week into their new class so our servers were nervous and still learning the basics. To help them along are managers and trainers who prompt the students as they take orders and bring the food. It was great to see students in a supportive environment where they were truly learning by doing.

While the service needed support the cooking was beyond fantastic! We had a three course meal that was fantastic, including pork chop with mustard sauce and roasted potatoes, and for dessert an amazing Crème Brule! Throughout the meal our water glasses were topped up and the bread basket was replenished (their bread rolls were my favorite part of the meal, they were so delicious and the chef informed us later that they are indeed made on site!).

The atmosphere is lovely, sitting on a balcony with the gardens surrounding you and the nervous smiles from the staff were a great addition to the meal. At the end of the meal the head chef came and chatted with us and reassured us that in three months, these students would be perfect and wouldn’t need the constant oversight they need now. I figured that gives me a good excuse to head back for lunch in a few months and I definitely think it’s a great place for our guests…amazing food and helping students learn, it’s a win-win!
